I prepared this carrot and coriander soup yesterday, as we have invited one of our friends for lunch. We thought of preparing something new but we ended up making this healthy and tasty soup. Full credit goes to hubby as he chopped all the veggies for this soup.
Heat the oil in a large pan, add the onion, then fry for 5 min's until softened. Add the carrots, potatoes, and stock, bring to the boil, then reduce the heat. Cover and cook for 20 min's until the carrots are tender.
Tip into a food processor with the coriander. add salt and pepper accordingly to your taste. Then reheat for few minutes and enjoy!
