Quick and easy version of making vegetable pulao

Today’s post is about very simple and easy version of making Vegetable pulao,which will be ready in just 15-20 minute’s.I made this pulao on Saturday for my lunch.My kids and hubby enjoyed it very much.For this pulao there is no need for any gravy to accomplish the dish.Just raitha is perfect combination.Here goes the recipe..

Basmati rice-1cup 
Ginger garlic paste-1-11/2 tsp 
Chopped onion-1 small 
Cumin seeds-1tsp 
Green chillies paste as per your taste(here i used just 1/2 tsp) 
Chopped vegetables-1medium carrot,1/2 red capsicum,4-5 green beans 
Bay leaves-2 
Cinnamon-1 inch stick 
Salt as per taste


First wash the rice and soak with enough water for at least 15-20minutes.
Heat a non-stick pan with ghee,add cumin seeds,all gram masala and chopped onions.saute till onions tuns into translucent.
Add ginergarlic,green chillies paste and saute them for few seconds.Then add the chopped vegetables and stir them nicely and cook then with closed for 2-4 minute’s.Don’t cook vegetables too much.

Drain the water from the rice and add to the vegetables.Note: Don’t throw away the drained water,we will used later for cooking the pulao.
Mix slowly so that rice is completely coated with the vegetables and the masala.Cover it and cook just few seconds.Then microwave the water which we have kept before for 1minutes .

Usually for basmati rice the ratio is 1:11/2.So now add 11/2 cup of warm water and salt as per taste and mix slowly.cover it half until you see the bubbling,then cover it and cook on medium to low flame till the rice is cooked.If you see the rice is sticking to the pan you can add 1/4 cup of hot water and mix well.Cover it and cook for just 6-8 minutes,your pulao will be ready.

Just serve into serving bowl and enjoy delicious pulao with raitha.
