Easy Instant Pot Vegetable Pulao - Is a delicious one-pot meal cooked with fragrant basmati rice, whole spices and vegetables. This is an easy pulao to make in Instant pot or pressure cooker or on a normal pan. It is a Gluten-free and tastes great by its own. I enjoy this pulao with onion raita.

WHAT ARE ALL IN THIS INSTANT POT VEGETABLE PULAO RECIPE?
Whole spices - cardamom, cloves, bay leaf, star anise, mace and cumin seeds/Shahi jeera
Ground spices- garam masala
White onion - sliced lengthwise
Vegetables- potato, carrots, green peas and beans
Ginger garlic - Pureed
Green chillies - slit into two
Herbs - coriander and mint leaves
Ghee - You may use oil in place of ghee if you are making it vegan.
Basmati Rice
EASY INSTANT POT VEGETABLE PULAO RECIPE WITH STEP WISE INSTRUCTIONS:
Ingredients:
- Basmati rice – 2 ½ cups
- Ghee /clarified butter – 2tsp
- Shahi jeer/Black cumin – 1tsp
- Chopped onion – 1 big one
- Mixed veggies -1cup(carrot,beans,peas,potatoes)
- Slit green chillies – 3 or 4
- Ginger garlic paste – 1 ½ tsp
- Garam masala – ½ tsp
- Cloves – 3
- Cinnamon -½inch
- Cardamom – 2
- Star anise -1
- Bay leaf -1
- Mace -1
- Coriander leaves
- Mint leaves
- Salt to taste
Preparation:
Place the inner pot inside the Instant Pot.
Switch on the sauté mode. Once the inner pot is hot. Add ghee and allow it to melt.
Then add cumin seeds and allow it crackle.
Add cloves, cinnamon, cardamom, star anise, bay leaf and mace. Stir it.
Next, add chopped onions, slit green chillies and fry until onion turns into translucent.
Add ginger-garlic paste and fry for 1-2 minutes until raw smell goes.
Then add mixed veggies and sauté for 1-2 minutes. Add salt, coriander and mint leaves. Sauté for a few minutes
Wash the rice under running tap water for 2-3 times. Don’t soak the rice.
Add the rice to the bowl. Saute for a few minutes. Add garam masala and mix well.
Add 3 cups of water and Check for seasoning and add more salt if needed. Mix well.
Cancel the sauté mode. Close the lid and keep the valve in sealing mode.
Select pressure cook mode and set to high pressure for 5 minutes.
Once the cooking is done, allow the pressure to release naturally for 10 minutes, followed by quick pressure release.
Gently fluff the rice with a spoon or fork.
Enjoy tasty and delicious Vegetable pulao/pulav with raita or with any curry.
Stovetop Vegetable pulao
Today I have prepared this pulao in the Instant Pot, but you can prepare this on the stovetop pressure cooker and in a normal pan.
For a normal pan, follow the method which I have done in the Instant Pot. Then add 1:2 (Rice: Water), cover the pan with the lid and cook on a low- medium flame for 12- 15 minutes.
For stovetop pressure cooker, cook the rice on a medium flame for 2 whistles and let the pressure release naturally.
NOTES:
- Adjust spices according to your taste.
- You may use oil in place of ghee if you are making it vegan.
- Add vegetables according to your choice.
