Arbi Stir Fry
Here goes another stir-fry recipe with Arbi/Chamagadda Which is very easy to prepare and can be done with in15-20 minutes. It can be served as a side dish along with rice.
Ingredients:
- Arbi/Chamagadda-250 grams
- Red chilli powder-1 ½tsp
- Coriander powder-1 ½tsp
- Curry leaves a few
- Cumin seeds-1tsp
- Mustard seeds-½tsp
- Split urad dal-½ts
- Turmeric powder-½tsp
- Oil-2tbsp
- Salt as taste
Preparation:
1. Wash and pressure cook the Arbi in a cooker for 1 whistle or boil in hot for 10 minutes.
2. Once cooled remove the skin and chop into small pieces.
3. Take a pan, heat with 2tsp of oil and then pop mustard, urad dal, and cumin seeds. Once they crackle add curry leaves.
4. To the pan add the boiled Arbi pieces along with all spices and required salt and sauté well so that all spices coated with Arbi pieces.
5.Fry on low flame for 5-10 minutes without covering the pan.
6. Then finally garnish with coriander leaves and enjoy arbi stir fry it with rice and dal.
Note: please do not cover the pan with the lid while cooking, otherwise arbi will become soggy.
