Easy Chickpea Salad Recipe | Healthy Chickpea Salad

This Easy Chickpea Salad is a very healthy recipe which you can prepare within 10-12 minutes if have chickpeas ready in hand. To make little bit creamy and crunchy I used feta cheese, red onion, bell peppers, cucumber and olives.

Easy Chickpea Salad
My Kids don’t like veggies at all but somehow, I convinced them to try this and they ate all of it without any complaints. You can have this salad for lunch and also it is a perfect side dish for a picnic.
Here I used light dressing with olive oil and lemon juice for the salad along with coarse black pepper. This salad is very healthy because chickpeas contain a lot of protein which is very good for growing kids.

Ingredients:

  • Cooked Chickpeas – 2 cups
  • Chopped cucumber -1/4 cup
  • Roughly chopped red onions – ¼ cup
  • Bell peppers – ¼ cup chopped into cubes
  • Feta cheese – ¼ cup
  • Sliced olives – ¼ cup
  • Black pepper – 1tsp
  • Olive oil – 3tbsp
  • Lemon juice -3tbsp
  • Finely chopped coriander leaves – ¼ cup
  • Salt to taste

Preparation:

In a large mixing bowl, add all the chopped veggies along with cooked chickpeas. Here you can use store brought tins.
Next, crumble the feta cheese and add to the mixing bowl.
Add olive oil, lemon juice along with black pepper and required salt.
Toss all the ingredients to combine well.
Transfer into a serving bowl and enjoy a healthy and easy chickpea salad.

Note:
You can also use store brought tins to prepare this salad.
Adjust salad dressing according to your taste.
