Pukhlein Recipe | Meghalaya Special Rice Jaggery Bread

Pukhlein is a deep-fried snack from Meghalaya. Do you know this snack is made with just only 2 ingredients? I think by now you will be surprised. The 2 ingredients are nothing but rice flour and jaggery.

This month in our Shhhhh Cooking Secretly Challenge is about Meghalaya Cuisine. With my last month post, you will be aware that in this FB group, where every month they choose one state and where you will be paired with another blogger. Then you both exchange two ingredients with each other and you should prepare a dish using those ingredients as main. After that fellow bloggers have to identify the ingredients.

About Meghalaya:

Meghalaya is a state in northeastern India. The name means “the abode of clouds” in Sanskrit. The important crops are potatoes, rice, maize, pineapples, bananas, papayas, spices, etc. The Staple food of in Meghalaya is Tungtap, Kapa, Jadoh, Dohneiihong and Eromba.

The Secret Ingredient and my partner

This month I am paired with Shobana Vijay from Shobasdelight. Please do check Shobhana’s blog, she is having a lovely collection of recipes.

Shobana gave me Rice flour and Jaggery as secret ingredients and I gave her Vermicelli and Khoya. For this theme, we both decided to prepare a sweet dish. She prepared this delicious Shir Sewain. Then I decided to prepare this Pukhlein and recipe is from here.

Ingredients:

Rice flour – 1cup (here I used store brought)

Jaggery – ½ cup

Water as required for melting the jaggery

Oil for deep frying

Preparation:

In a pan dry roast rice flour on low flame for 5 minutes and keep aside.

If you are using homemade rice flour, you can skip the above step.

In a saucepan dissolve jaggery with water and cook to a thick syrup.

Once the syrup is thick, slowly add the rice flour and mix well without any lumps.

Cover the mixture with a wet cloth and keep aside.

Now heat the oil in a pan for deep frying.

With the mixture make small balls and press them with your palm into flat and deep fry in oil on medium flame until both sides turn into golden colour.

Transfer them on to a kitchen towel to absorb excess oil.

Repeat the process with the remaining mixture.

Enjoy this tasty and crispy Pukhlein.
