Instant mango pickle

Today I am sharing a very easy pickle using raw mangoes, that is Instant mango pickle. Avakaya is one of the popular pickle made in Andhra Pradesh. The recipe I am sharing here is the different version of original Avakaya, which we can prepare within 30minutes.

 

Instant mango pickle

Ingredients:

  • Finely chopped raw mango – 3cups
  • Red chilli powder – 3tbsp
  • Fenugreek powder – 1/2tsp
  • Mustard seeds powder – 1/2tsp
  • Turmeric powder – 1tsp
  • Salt as per taste
  • Asafoetida – 1/4tsp
  • Oil – 4tbsp

Instant mango pickle

Preparation:

1. Chop the mangoes into small pieces and keep aside. Take a large bowl, add the chopped mangoes along with chilli powder, turmeric powder and salt, mix well and adjust the spice according to your taste by increasing or decreasing the chilli powder.

2. Cover the bowl and keep aside for 10-15 minutes (this is optional).

3. Dry roast fenugreek and mustard seeds, allow them to cool and then grind into a fine powder.

4. Add this grounded powder to the pickle and mix well.

5. Heat a pan with oil, add asafoetida and mustard seeds, when the mustard seeds begin to crackle add this to the pickle and stir well.

6. Allow it to sit for at least 10 minutes so that all the spices are nicely blended with mangoes.

7. Transfer to an airtight container and enjoy delicious instant mango pickle.

 

Note: Always use a dry spoon when using and keep refrigerated for long shelf life.
