Brinjal-Drumstick curry goes really with rotis and rice.The time to prepare it is also very less.We make this curry regularly for rotis.Here i have added brinjal and drumstick but you can add the vegetables accordingly to your taste.It requires only chilli,coriander,onions and tomatoes.I have added grounded peanuts powder to this curry which had given a wonderful taste.

Wash and cut each brinjal into 4pieces and soak them in salt water.so that it will not become sour.Then cut the Drumsticks 1 inch length.
Heat a pan with oil,add mustard+udr dal once they pop add chopped onions along with crushed garlic and curry leaves and fry them till onions turns into light golden colour.
Add chopped tomatoes along with brinjal and drumstick pieces.Give them a nice stir and then add turmeric,chilli and coriander pwds along with salt and fry them all on medium flame for 5mints or till the brinjals changes its colour.
Add required water and cook with closed lid till all the vegetables are cooked and until gravy becomes little thick.
Once all are cooked add groundnuts pwd and mix well and cook for few mints.Finally add coriander leaves and remove from the hob and transfer into a serving bowl and enjoy greatly with rotis or rice.
