Potato Fry With Roasted Spices

Potato fry is prepared in my kitchen very often so this time I want to try this recipe with a twist by adding roasted spices. In this recipe, I dry roasted cumin seeds, coriander seeds and fennel seeds and lightly crushed in mortar and pestle.

Ingredients

  • 250 gms Potatoes
  • 1 Onion
  • 1 teaspoon Red chill powder
  • 2 nos Green Chillies
  • Turmeric a pinch
  • Curry and coriander leaves
  • ½ teaspoon Mustard seeds
  • ½ teaspoon Split urad dal
  • Salt to taste
  • 3 tablespoon Oil

Spices to Dry Roast:

    Jeera seeds/Cumin seeds-½tsp

      Coriander Seeds-1tsp

        Fennel Seeds-½tsp

          Instructions

          • wash and pressure cook the potatoes for 2 whistles.
          • Dry roast the spices and crush them lightly in the mortar and pestle.
          • Allow to cool the pressure cooker, meanwhile chop onions finely.
          • Remove the outer skin of boiled potatoes, and chop into small pieces and keep aside.
          • Heat a pan with oil, add Mustard Seeds Split urad dal and curry leaves.
          • Add chopped onions, slit green chillies and fry till onions turn golden brown.
          • Then add potatoes, turmeric and red chilli powder.
          • Add salt and sauté for a while, see that the bottom shouldn’t get burn.
          • Close the pan with a lid for 2mints.Then Sprinkle the roasted spices powder and mix well so that all the potatoes are nicely coated.
          • Finally, garnish with coriander leaves.
          • Serve this tasty Potato Fry With Roasted Spices as a side dish with dal or curd rice.
